Ingredients
7 oz (about 200 g) egg noodles
3 garlic cloves
¼ cup roasted peanuts
¼ cup tahini or Chinese sesame paste
1 tbsp. mushroom soy sauce
1 tbsp. soy sauce
1 tsp. chili oil
1 tbsp. lime juice
5 tbsp. hot water
1 ½ tbsp. sesame seeds
4 scallions, chopped
Directions
Step 1
Cook the noodles according to the package instructions.
Step 2
In a mortar and pestle, mash the garlic, then add the peanuts. Crush them until finely chopped.
Step 3
In a large bowl, combine the garlic-peanut mixture with tahini, mushroom soy sauce, soy sauce, chili oil, lime juice, hot water, and sesame seeds.
Step 4
Add the cooked noodles and chopped scallions to the bowl. Mix well to combine.
Step 5
Garnish with additional scallions on top and serve immediately.
